In this wine, we can capture all the gentleness and structural power of the noble French grape variety while at the same time the wild expression typical of the wines of Gildo Gennari. A fascinating combination of pleasure and tradition.
The winemaking process is typical for red wines, but the maceration of the skins is stopped when the wine takes on the desired and acclaimed color by Gildo. Fleeting moments that offer different shades each year and, for this reason, reflect the originality of such an essential and experimental personality as that of its producer.
This is a wine that has a remarkable structure, a very pleasant fruity sensation of small berries and wild sour cherries. On the palate, it is soft with a strong freshness and salinity typical of the lands of the Colli Berici. Pleasant aromas also include wild mint and balsamic aromatic herbs. It is persistent with a long fruity sensation that ends in a pleasing soft feel of dried fruit.
This is an atypical rosé wine with a strong structure because it comes from a grape variety like Cabernet Sauvignon. It has an aromatic component of red fruit that brings it very close to appetizers and summer aperitifs by the pool. Excellent with seafood cruditè, particularly the red shrimp from Mazara del Vallo, and tuna carpaccio. It also pairs very well with traditional cured meats from Veneto and Tuscany such as Soppressa Vicentina, de Brenton, and Tuscan salami or finocchiona. It complements first courses with tomato sauce, as well as spelt and chickpea soups.
