I Tortiglioni made from durum wheat semolina and spelt by Poderi di Pietramogolana are made with 50% spelt and 50% wheat, both cultivated in the lands of the Berceto farm, in the Parma Apennines.
This pasta is bronze-drawn and slowly dried, thus obtaining a handcrafted and flavorful pasta that is ideal for eating every day with any type of sauce, which, thanks to its roughness, blends perfectly.
The choice to create a pasta with half spelt and half durum wheat comes from the idea of producing a pasta that is easier to digest and has a lower glycemic index due to the presence of spelt, while at the same time, thanks to the durum wheat, providing a more balanced flavor that can be enjoyable to eat every day.
I Pasta shapes made from durum wheat semolina and spelt by Poderi di Pietramogolana are excellent for sauces based on meat such as red and white Chianina IGP sauce, or for a sauce made from Piennolo cherry tomatoes from Vesuvio DOP or for fresh asparagus and basil cream.
