The Lean Cured Pork Jowl from Salumificio Pavoncelli is a cured meat product made from the pork capocollo wrapped in thin layers of lean cured pork jowl and externally filleted, and coated in vegetable paper.
It has a deep red color of the meat and the characteristic white of the fat. Upon slicing, it appears compact with good slice retention. It has an inviting aroma of herbs and aging. The flavor is strong with good aromatic notes.
The lean cured pork jowl is a lean cured meat, with many pink parts (lean meat) clearly visible. The difference from other cured meats is remarkable, as it contains over 450 kcal/hg for the jowl, and 300-350 kcal/hg for the lean cured pork jowl.
The lean pancetta coppata can be consumed like a regular cold cut, sliced thinly and paired with bread (perhaps toasted and warm to melt the fat) or other baked goods, such as tigelle. You can use it to dress pasta or risottos.
