The Reserve Cheese aged 36 months by Corrado Benedetti is created thanks to a love for traditions and attention to detail.

The fresh cheese, only twenty days old, is taken from the pastures on the Lessini Mountains. These forms of fresh raw unpasteurized cow's milk are then brought to the laboratory. It is here that the true adventure begins: the aging process.

The Care of the Cheese

During this process, Corrado Benedetti, as they say in jargon, takes care of the cheese, shaping it, brushing it, and oiling it until it matures, becoming a dairy masterpiece with the aging period burned into it.
