The Carnaroli Integrale Classico Rice from Acqua e Sole is truly extraordinary! It is no coincidence that Carnaroli is known as the "King of rice": thanks to its high starch content, firmer texture, and longer grains, it is able to hold cooking superbly.
The Carnaroli Rice is a variety native to Pavia, Novara, and Vercelli, developed in 1945 by the rice farmer from Paullo Angelo De Vecchi, who crossed two other rice varieties: Vialone and Lencino. The name of this particular rice seems to derive from that of one of his collaborators, a certain Carnaroli.
This is primarily a whole grain rice that retains many more nutritional properties compared to traditional refined white rice because, being less processed, it contains a greater amount of fiber. Brown rice is indeed a highly digestible food, very beneficial for the intestines, and it has a lower glycemic index precisely due to its high fiber content.

It is ideal for making risottos based on meat as it remains particularly fluffy in the style of Mantuan tradition.
Its lower quantity of starch indeed makes it difficult to achieve creamy and flowing risottos. A recipe absolutely worth trying is that of risotto with radicchio and pancetta.
However, it is also perfect for preparing cold rice dishes based on vegetables as it maintains its crunchiness and, above all, does not break.
