The broad beans are a green legume that is harvested in late spring, a period during which they can also be eaten raw, then they are left to dry on the plant itself and can be consumed dried for the rest of the year.

Broad beans have a low fat content and are naturally rich in plant-based proteins, carbohydrates, fibers, vitamins (such as B1, folic acid, and the A group vitamins) and minerals (especially iron and manganese).
