Paccasassi, also known as spaccasassi, are a wild herb that grows on the cliffs by the sea. They are usually found in the area of the Riviera del Conero and are an ancient culinary tradition as well as a source of pride for Ancona.
This sea fennel is also listed among the protected plant species in the Cornero Regional Park, as well as in other Italian and European areas.
Paccasassi have a very particular taste and can be used as the main ingredient in many recipes or as a condiment for other dishes such as fresh bread, mortadella, and anchovies.
