South Tyrol Sauvignon DOC “Sanct Valentin” - St. Michael Eppan

The Alto Adige Sud Tirol DOC Sauvignon Sanct Valentin 2019 from the St. Michael Eppan Kellerei  winery is a wine of the highest profile, the most important of the Sanct Valentin line and one of the most awarded white wines in Italy. It is a wine made from seductive fruit, with excellent minerality and persistence.

Varieties: 100% Sauvignon
Vineyard: select vineyards in San Michele and Appiano Monte (450-600m). The soils are gravelly with calcareous content.
Training system: Guyot
Harvest: mid to late September; manual harvesting and selection of the grapes.
Vinification: the largest portion (75%) is fermented in steel tanks, where the wine rests on the fine lees until the end of April. The remaining part is vinified and aged partly in tonneau (15%) and partly in large casks (10%).

Acidity: 6.2 g/l
Alcohol content: 14% vol.
