The Babà in glass cooking comes from a rather ancient technique that allows the babà to be cooked directly inside the glass jar. This cooking method makes the babà's taste unique as well as healthy, as it minimizes calories and preserves its softness.
Master Pastry Chef Michele Somma has revived this ancient technique to create the limoncello babà, a variation of the classic Rum Babà. The lemons used are strictly those from the Amalfi Coast, which manage to give the right note of freshness.
The Babà in jar with Limoncello puts both those who lounge around and those who work on the same level, it can be tasted while standing or walking, but our preferred method is to serve it, soaked in limoncello, on a small plate, after a lunch or dinner with good company. The jar cooking technique then allows us to enclose and preserve all its aromas, increasing its preservation capacity and flavor, as well as allowing us to enjoy the dessert directly from the jar: a real treat! After opening, keep the jar in a cool and dry place for 4/5 days.
Ingredients: flour from soft wheat type “0”, water, sugar, butter, whole egg, salt, brewer's yeast, limoncello. Does not contain sulfites.
