Organic Pinot Noir IGP “La Quercia” - La Casaia

This elegant wine is born from a careful selection of Pinot Noir grapes and from a skilled vinification process with skin maceration.

Production area: the vineyards are located in Lombardia, in the heart of Oltrepo Pavese, in the municipality of Santa Giuletta at 250 m above sea level, with a south-southwest exposure.

Organic Pinot Noir IGP “La Quercia” - La Casaia: How is it produced

Features of the vineyard: the production vineyard was planted in 2006 with a planting density of 4000 vines per hectare and is trained as a low guyot. The soil composition is clayey loam, in a well-sunny position, with a slope of about 15%. The high planting density aimed at creating root competition and the careful and respectful production methodology are the fundamental characteristics for obtaining superior quality productions.

Harvesting methods: carried out exclusively by hand with selection and sorting of the product.

Winemaking: the grapes, after harvesting, are transported to the company winery where winemaking begins. The first phase is crushing with the separation of the berries from the stems, the must obtained is then fermented in stainless steel tanks with temperature control. Alcoholic fermentation begins, a long maceration of the must in contact with the skins for 14 to 16 days with a temperature never exceeding 22°C. During this phase, pump-overs of the must are carried out every 6 hours to increase the extraction of color, aromas, and scents. At the end of fermentation, the wine is separated from the skins and stored in tanks where aging begins.

Pressing: pneumatic press with a central bladder.

Storage tanks: stainless steel tanks with temperature control.

Bottling: the wine is left in the tank to age for a period of 8-10 months. Before being bottled, it is refrigerated at -4°C for 10-12 days for a guaranteed tartaric stabilization, then filtered and subsequently bottled. Marketing begins after a minimum aging period of 60 days.

Open fireplace, large wooden table, many friends waiting for a steaming polenta with a beef braised dish, which has a scent that fills the room, paired with our "La Quercia"! I would say perfect!

To try with semi-aged cheeses, cured meats and cold cuts (excellent with speck), mountain first courses, tagliatelle with truffles, venison ragù, wild boar and duck, mushroom risottos, polenta and small sausages, braised dishes and roasts.

Last but not least, balsamic vinegar: an ingredient that is often difficult to pair with wine, when used for reductions it goes divinely with the fruity notes of Pinot Noir.

Serving temperature 16-18 degrees.

Tasting notes

It has a deep crimson color with garnet highlights, on the nose notes of underbrush, sour cherry, and cherry, combined with a beautiful depth; on the palate, it outlines the elegance of the varietal including minerality, with a velvety tannin that enhances its aromatic persistence.
