The Asiago dop takes its name from the Vicentine plateau, which boasts many quality pastures with fine floral components and premium hay. It is made from cow's milk and has a semi-cooked texture.

It is a typical and ancient cheese whose history dates back to around the year one thousand, produced by the Celtic people. The Asiago dop di Allevo is the one aged for 5 - 6 months. It has a compact texture, a white color tending towards straw yellow with small to medium-sized holes. It has a strong and milky flavor that is particularly sweet and savory.
