The Salame Mantovano, from the Salumificio Pedrazzoli, is a product made from mature pork meat and fat, flavored with salt, pepper, fresh garlic, and cloves. The meat from a single animal is used in its production.
The Salame Mantovano has been traditionally produced throughout the province of Mantova since the times of the Etruscans. Its spread was made possible thanks to the Gonzaga dynasty, who made extensive use of this delicious food.
Its production involves grinding to a “coarse grain”, adding garlic and pepper. The mixture is then blended and stuffed into a natural casing, and left to dry for about 7 days.
The resulting salume is a "strawberry" red color, the paste is soft, and its flavor is balanced. The aroma is intense and clean, with slight hints of fermentation and aging processes.
