The term Kamut should always be followed by the “R” for registered to indicate a protected trademark. The generic term Khorasan refers to the cultivar registered on December 30, 2003, also in Montana by the USDA. Khorasan is the name of the Iranian region from where this cereal comes and where the first grain arrived in 1921. Nutritionally, it is rich in zinc, magnesium, and selenium. The grain is 2 – 3 times larger than durum wheat grains, and therefore contains higher quantities of proteins, vitamins, amino acids, and mineral salts. It contains gluten, although in minimal quantities, and can therefore be preferred by people who have difficulty tolerating it.
