Mustard, as is known, is a typical Mantuan recipe made with fruits and vegetables in a syrup of sugar and mustard essence. Therefore, it is particularly spicy, but Senga manages to produce it in a very balanced and delicate way.
With the apples from her estate, she makes this mustard to pair with Castelmagno, Pecorino Romano, Cabrales, Grana Padano DOP cheese, boiled meats, and roasts.
