It comes from the most suitable hilly areas of the eastern Verona region, between the valleys of Illasi and Mezzane. Virgin territories in terms of viticulture, they have proven capable of producing great wines that are strongly identity-focused and territorial. Corvina, Corvinone, and Rondinella are the classic blend of Valpolicella.
This wine, obtained from traditional winemaking in steel tanks in October, is then passed over the toasted pomace used for the production of Amarone. It is allowed to undergo a brief refermentation at a controlled temperature. This is a period during which glycerin, sugars, and aromatic components are extracted.
Subsequently, it is aged in oak barrels for about 12 months and then for 6 months in the bottle. The final alcohol content reaches 14% Vol. Alcohol
Ripasso is a wine that is now recognized as one of the trendiest and most appreciated even by young people. Yet it embodies a long tradition of Veronese winemakers who have always used the "ripasso" technique of maturing the dried Amarone grapes over fresh vintage wine to ensure that the latter has greater structure and complexity.
This Ripasso combines the freshness and structural elegance of a Valpolicella wine with aromatic notes reminiscent of Amarone.
Concentration of red fruit and cherry both on the nose and palate, along with a pleasant spiciness of black pepper that intensifies on the palate. Nice freshness and pronounced tannins typical of ripassi. Intense and persistent finish.
Excellent with spiced cured meats typical of the Venetian tradition and cheeses, both goat and cow, with medium to long aging. Pairs well with first courses with meat sauces, as well as grilled and braised meats.
