The San Pietro in beeswax from Latteria Perenzin is a delicious aged cheese with a compact texture and rare eyes, covered with a crust treated on the surface with natural beeswax that retains moisture and gives a pleasant velvety consistency with a typical honey flavor.
To achieve softness and delicacy, a minimum aging of 60 days is required. As it ages, the flavor takes on aromatic tones with a mild spiciness. It is a highly appreciated cheese.
Indeed, the San Pietro in beeswax was declared in 2015 at the World Cheese Awards the Best Italian Cheese and the Best Cheese in Europe. The esteemed product from Latteria Perenzin thus became one of the 60 best artisan cheeses in the world. It also collected medals in 2016, though it did not reach the coveted award won the previous year.
