As is well known, Mustard is a typical recipe from Mantova made with fruit and vegetables in a syrup of sugar and mustard essence. Therefore, it is particularly spicy, but Senga manages to produce it very balanced and delicate.
With the apples from her estate, she makes this mustard to pair with Castelmagno, Pecorino Romano, Cabrales, Grana Padano DOP cheese, boiled meats, and roasts.
