Mostarda, as it is known, is a typical dish from Mantova made with fruits and vegetables in a syrup of sugar and mustard essence. Therefore, it is particularly spicy, but Senga manages to produce it in a very balanced and delicate way. Using her own apples and pumpkins, she creates this mostarda to pair with Crescenza, Piemontese Tome, Taleggio, Parmigiano Reggiano DOP, smoked cheeses, cotechino.
