Taking inspiration from the recipe of Sbrisolona, Parole nel Piatto has reinvented the sbrisolette calling them Pollicini, based on the fairy tale of Little Thumb and his breadcrumbs. This is the version with walnuts and chocolate.
Made with the same technique as artisan Sbrisolona: with butter and not with lard and a proper balance between "00" flour and corn flour. Only fresh ingredients are used, kneaded just enough to maintain the characteristic of Sbrisolona: its crumbliness.
The Pollicini are a dessert for all occasions, from a breakfast with milk or coffee to a tasty snack accompanied by a glass of wine. They pair well, like almost all desserts, with dessert wines or sweet wines like Recioto di Soave, an aromatic white wine.
Ingredients: type "00" flour, fresh butter, granulated sugar, walnuts, chocolate chips, fine cornmeal, vanilla, salt.
