The Pork Busto from Salumificio Pavoncelli is a cured meat product obtained from the pork capocollo wrapped in thin layers of trimmed and filleted pancetta, covered in vegetable paper.

The Pork Busto is derived by removing the ham and shoulders from the central part of the pig. The remaining parts, namely the loin, pancetta, and rosticciana, are combined into a single bustino. This is then boned, flavored with fragrant spices, marinated, and cooked in lard to achieve a soft and tasty product.

Its characteristic light pink color, with a golden hue in the rind, is firm when sliced, with a clear distinction between the various lean parts and the spices.

The roast aroma is pleasant, strong, and clean, with a balanced melt-in-your-mouth texture and a soft, pasty consistency.
