The Pancetta Coppata Sgrassata from Salumificio Pavoncelli is a cured meat product that is aged and made from pork capocollo wrapped in thin layers of trimmed and filleted pancetta on the outside, and covered in vegetable paper.
It has an intense red color of the meat and the characteristic white of the fat.
When sliced, it is firm with good slice retention.
It has an inviting aroma of spices and aging.
It has a strong flavor with good aromatic notes.
The lean coppata bacon can be enjoyed like a regular cured meat, thinly sliced and paired with bread (perhaps toasted and warm to melt the fat) or with other baked goods, such as tigelle. You can also use it to dress pasta or risottos.
