The dried broad beans from Azienda Agricola Cleopatra are dried legumes grown naturally, without the use of chemicals, being entirely hand-processed and respecting the rhythms of the seasons.
The broad beans are a green legume that is harvested in late spring, a period during which they can also be eaten raw, then they are left to dry on the plant itself and can be consumed dried for the rest of the year.
Broad beans have a low fat content and are naturally rich in plant-based proteins, carbohydrates, fibers, vitamins (such as B1, folic acid, and the A group vitamins) and minerals (especially iron and manganese).
The dried broad beans from Sardinia from the Azienda Agricola Cleopatra are excellent for the preparation of salads (for example with carrots, zucchini, arugula, green beans, or spinach and flavored with fresh mint or lemon balm), appetizers, first courses, soups (with escarole, carrots, potatoes, or peas), purees and velvets, second courses (for example, meatballs) and paired with cheeses.
They are usually paired with sweet-flavored vegetables or herbs to eliminate their slightly bitter taste.
To make them more digestible, it is recommended to remove the outgrowth and the outer skin before consumption.
Before cooking, it is advisable to subject them to rehydration, soaking them in warm water for about 6 hours.
They should be stored in well-closed containers in a dark, cool, and dry place, away from heat sources.
They should preferably be consumed within 3 years from the packaging date.
