The Bosana table olives in natural brine are a typical variety of olives from the Sardinian region. They are green olives, harvested just before ripening, processed using the natural method. They have a soft texture when chewed, and the taste is that typical of olives in brine.

The olives are washed, placed in barrels containing a solution of water and salt (brine). Once the barrels are sealed, the natural lactic fermentation process begins in the following months: a modest amount of lactic acid is produced from the few sugars present, which, along with salt, preserves the olives.
