Soil type: Medium clayey soil
Training method: Sylvoz.
Winemaking: The utmost care and dedication are given to the winemaking of this product. The grapes, coming from a vineyard with very low production, are hand-picked during the second decade of September. This is followed by a short prefermentative maceration at controlled temperatures. The must obtained is then transferred to steel tanks where, at a controlled temperature of 18-20 °C, aided by highly selected yeasts, fermentation is completed within 10 days. Maturation occurs for several months in contact with its own noble lees in steel tanks until bottling, and then it rests in the bottle for the following two months.
