"La Rustica" is a cornmeal for polenta made from 100% whole red corn ground stone, left raw and coarse to preserve the germ, the heart of the grain, which is the most valuable characteristic.
Then follows a light refining necessary for proper preservation and better edibility.
Beautiful to look at and an important source of fiber is corn bran. With the unique characteristic of minimal processing, whole grain flour contains the starchy part of the corn, flour, and semolina.
