To prepare the clam sauce, we use only the freshest and most selected Venerupis decussata clams. The raw material is collected in open sea, away from pollution sources and in marine waters classified as category A (the highest quality level), generally off the Riviera del Conero.

For the preparation of the sauce, a base of EVO oil, garlic, parsley, a bit of chili pepper is used, and then we add a 100% Italian tomato puree that gives a consistent body.
The clams are opened separately by steaming them with white wine, and then added to the sauce without being shelled.
In keeping with the traditional recipe, the cooking water of the clams is filtered and subsequently used to flavor the sauce, avoiding the addition of artificial flavors.
Heat the sauce on low flame for a few minutes before mixing it with the dish to be seasoned. Which pasta do we recommend? Obviously, spaghetti, we prefer nice thick spaghetti, and enjoy your meal!
