Zizzona from Battipaglia 1 kg - Jemma: How is it produced

The production process begins with the addition of natural whey starter and rennet to fresh buffalo milk, thus commencing the coagulation phase. Maturation occurs through natural lactic fermentation, ensuring the cheese has an authentic flavor and a unique texture.

Once maturation is complete, the curd is handmade for spinning and shaping, following artisanal methods passed down through generations. After a brief cooling in cold water to firm up the cheese, the Zizzona is salted in a brine called "salsetta", which gives the product its characteristic balanced flavor.

The Zizzona di Battipaglia DOP is packaged with its governing liquid, which preserves its freshness and softness until the moment of consumption.
