This Monte Veronese DOP can be defined as “old”.
Produced with raw cow's milk and aged 12-18 months. The rind is thin and elastic, and the paste varies in color from pearl white to straw yellow, especially in the summer. It has a medium eye.

It has a scent of multifloral honey, especially in the summer, and fresh butter. Intense and savory on the palate, it has a nice taste persistence with a pleasantly round finish.

Cheese that is very suitable for grating and for first courses like lasagna Bolognese or vegetable pasta. Excellent on vegetable soups and legume creams.

It pairs well with structured and aged white wines, with medium-bodied red wines, and one in particular, regional, with Valpolicella Ripasso. It can be used at the end of the meal with a delicate acacia honey.

This cheese has a more intense and savory flavor compared to a fresh Monte Veronese and a 6-8 month aged Monte Veronese which are more ideal and appreciated even for typical aperitifs and appetizers.
