The bean soup prepared in the Tuscan style is a hearty dish that Agriturismo Il Poggio has made according to the traditional recipe from the Siena area.
First of all, the classic beans from the territory are used, and one in particular whose name brings a smile: the beans from purgatory. This bean is typical of a town in upper Tuscia, in the province of Viterbo, particularly in the city of Gradoli.
They are also called canini. The name comes from a long tradition dating back to the 1600s, when on Ash Wednesday a large lunch based on this type of boiled bean was offered in the square in Gradoli.
The Sienese version also includes the use of sage and borlotti beans.
The bean soup offered by Il Poggio takes inspiration from the famous fagiolata of Gradoli, made with canini white beans or fagioli del purgatorio.
It is a very flavorful dish with a nice creaminess. In addition to canini and borlotti beans, it includes sage, extra virgin olive oil, Tuscan tomato paste, rosemary, garlic, chili, salt, and pepper. Slightly spicy at the end, it is deliciously soft and savory.
You can cook pasta in it only if you add the necessary water. Additionally, it can be enriched with shavings of red or black pecorino from Pienza. An intriguing suggestion for an equally alternative but very good dish is the addition of mussels, shell removed, to be placed on the surface of the soup with some fruity extra virgin olive oil. Tuscan red wines like Chianti and Sangiovese pair well.
