The Giardiniera is perhaps one of the most well-known and appreciated appetizers in Italy. It is a mixture of chopped vegetables, boiled in water and vinegar, often used as a side dish, garnish, or ingredient in more elaborate preparations.
The giardiniera has a long history behind it that traces its roots to peasant traditions, as it originated as a method to preserve part of the abundant summer vegetable production for consumption during the winter.
Being a typical preparation of many regions in Italy, there are numerous variations that differ in the vegetables used, the addition of herbs, or the methods of preparation. The vegetables mainly used to prepare giardiniera are carrots, celery, the flower heads of cauliflower, small onions, bell peppers, and gherkins.
To produce his Sweet and Sour Giardiniera, Corrado Benedetti cooks the vegetables separately in white vinegar and wine, so they remain crunchy. Once bottled, the vegetables are then covered with a mix of white vinegar, white wine, and extra virgin oil, a process that makes it lighter and tastier. To be served, it must be drained, and before bringing it to the table, it should be dressed again with extra virgin olive oil and a dash of pepper.
