The Ubriaco di Zibibbo cheese from La Casearia Carpenedo is an extraordinary experience that tells the story of Sicily and its islands. Born from a passion for Sicilian sweet wines, this drunk cheese made from Zibibbo is crafted using the finest Sicilian cheese. This incredible drunk cheese breaks down barriers and prejudices, bringing the flavor of the sun to everyone's palate. Antonio Carpenedo has managed to refine and transform with love Sicilian cheese and Zibibbo into a unique product, which completely changes to gift us with the magic of a land bathed by the sea that offers a unique savoriness to the milk, wonderfully balanced by the sweetness of the passito wine.
The Sicilian cheese used is unique: made with raw cow's milk, aged for at least 6 months, in a classic parallelepiped shape, with a pale yellow crust due to the passito, almost golden. The sweet residue of the passito in the crust pervades the sense of smell, stimulated by a complex array of genuine and bold aromas. The aroma takes on delicately honeyed characteristics in the paste.
The cheese Ubriaco di Zibibbo from La Casearia Carpenedo (which we present to you here in its whole form) is undoubtedly a cheese for contemplation with an excellent structured red wine. On the palate, it is dry, savory, perfectly balanced with the sweet residual left by the passito wine. Excellent for wild game carpaccios.
Its paste presents a deep yellow color, compact with possible fissures. To the touch, the compactness of this semi-hard paste surprises, the result of the organoleptic transformation due to the re-fermentation in the passito wine. Pleasantly soft to the touch of the fingers, enjoyable to taste with the fingertip.
