The cheese Ubriaco di Zibibbo by La Casearia Carpenedo is an extraordinary experience that tells the story of Sicily and its islands. Born from the passion for Sicilian sweet wines, this drunken cheese made from Zibibbo features the best Sicilian cheese chosen by Antonio Carpenedo. A combination that welcomes, pampers, and leaves no one indifferent, just like Sicily.
This incredible drunken cheese breaks down borders and prejudices, bringing the taste of the sun to everyone's palate. Antonio Carpenedo has managed to refine and transform with love Sicilian cheese and Zibibbo into a unique product, which changes completely to gift us, in a single bite, the magic of a land washed by the sea that offers a unique saltiness to the milk, wonderfully balanced by the sweetness of the passito wine.
The cheese used is unique in its kind: made with raw cow's milk, aged for at least 6 months, in a classic parallelepiped shape, with a straw-yellow rind due to the passito, almost golden. The sweet residue of the passito on the rind pervades the sense of smell stimulated by the complex interplay of frank and assertive aromas. The aroma takes on gently honeyed characteristics in the paste.
The cheese Ubriaco di Zibibbo from La Casearia Carpenedo (which we present on this page in a 200g portion) is undoubtedly a cheese for contemplation with an excellent structured red wine. On the palate, it presents itself dry, savory in perfect harmony with the sweet residue left by the passito wine. Excellent for wild game carpaccios.
Its paste is a deep yellow, compact, and with possible fissures. To the touch, the compactness of this semi-hard paste surprises, a result of the organoleptic transformation due to re-fermentation in the passito wine. Gentle to the pressure of the fingers, pleasant to taste at the fingertip.
