Cimbro Fosse Venturi cheese 200g

This is a cow's cheese that is aged in the famous Fosse Venturi of Sogliano al Rubicone for 6 months.

Made from cow's milk, the whole wheel weighs about 2 kg and has a hard texture. Particularly aromatic, it takes on the characteristic scent of the caves and improves in intensity and persistence on the palate. Savory and slightly spicy.

La Casara Roncolato, Veneto

This cheese is born from a friendship between Giovanni Roncolato and the Fosse Venturi company. The sharing of a high-quality project and the recovery of ancient dairy traditions from the mountains of Lessinia in Verona, along with the extraordinary history of Fosse Venturi in Sogliano al Rubicone and their aging technique in pits. Among the hills of Roncà, beneath the ancient volcano of Calvarina, the story of the Roncolato family and their dairy unfolds. In the 1920s in Brenton, Ermenegildo with his sons Angelo and Romano began the activity of cheesemaking. Verdant pastures climb to the highest peaks of the Monti Lessini, the Small Dolomites of Verona. Since 1964, the dairy has been taken over by Romano and he named it La Casara. This long tradition continues today with his children Giovanni, Gildo, and Letizia, and it has become one of the most important and refined realities in the Veneto and Italian production scenery. Giovanni has been the true promoter of the revival of the DOP Monte Veronese and has especially sought from the beginning to bring young people back to the Veronese mountains to reclaim the tradition of the malghe. Today, La Casara has won multiple awards at international competitions and offers a wide range of its own dairy products including cow, goat, and sheep cheeses. Over time, Giovanni has become a refined selector of cheeses from all over the world, and here we present to you some of them. La Casara also has its own production of cured meats thanks to free-range farming in the lands of Brenton, from which the famous and rare soppressa originates. Authentic flavors, local specialties, and genuineness are the fundamental characteristics of this beautiful Italian reality.
