The Paški Sir DOP is a hard cheese made from whole milk of the indigenous sheep breed from the island of Pag in Croatia.

The aging process of Paški Sir DOP lasts at least 60 days; this cheese typically has a cylindrical shape, a flat base, and a top surface that can be flat or slightly convex.

Its dimensions vary with a diameter between 18 and 24 cm, a height between 7 and 13 cm, and a weight ranging from 1.8 to 3.5 kg, depending on the size.

Tasting notes

The crust is smooth and hard, with shades ranging from golden yellow to pale reddish-brown, while the paste is compact, slightly elastic, easy to slice, with a dense consistency and few or no irregular holes, pale yellow in color.

As it ages, the cheese loses its elasticity and the color of the paste darkens.

The flavor, initially slightly spicy and sweet, becomes more intense with aging, while the aroma recalls sheep's cheeses, with notes of aromatic herbs.
