The Salame Mantovano from Salumificio Pedrazzoli is a product made from mature pork meat and fat, flavored with salt, pepper, fresh garlic, and cloves. For its production, the meat from a single animal is used.
The Salame Mantovano is a salami traditionally produced throughout the province of Mantova since Etruscan times; its spread became possible thanks to the Gonzaga dynasty, who made extensive use of this delicious food.
Its production involves grinding to a “coarse grain” adding garlic and pepper, the mixture is then blended and stuffed into a natural casing and left to dry for about 7 days.
The salami obtained is a “strawberry” red color, the paste is soft, and its flavor is balanced. The aroma is intense and clean, with slight hints of fermentation and aging processes.
