The Salame Milano with whole natural casing is a true classic of the northern Italy charcuterie tradition and is one of the flagship products of the Salumificio Pedrazzoli.
This salami is made from the processing of lean pork combined with rich fat, minced to a rice grain consistency. All of this is seasoned with salt, cracked black pepper, ground white pepper, wine, and sometimes garlic. The casing used to stuff it is natural, a true added value compared to traditional synthetic casings.
The origins of Salame Milano date back to the time of the Sforza and Visconti families, when the people derived a strong nutritional contribution from pork, and it takes its name from the area where it was born and where it is still produced today.

The natural casing Salame Milano is served thinly sliced, predominantly machine-sliced. Excellent with michetta milanese and generally with bread. A good pairing with young red wines like Grignolino d’Asti and Monferrato Casalese.
