The sour cherry (Prunus cerasus variety austera) belongs to the group of sour cherries, like wild cherries and maraschino cherries, but it differs by having a higher level of acidity when ripe.
This smaller fruit is flattened at the poles and has a deep purple color of both the flesh and the skin, a richness that we also find in its taste with strong and specific notes.
Sour cherries should not be confused with wild cherries or amarena cherries, which are significantly sweeter.
