The Black Uncinato Truffle, the Tuber uncinatum Chatin, is harvested and consumed from October 1st to December 31st and is considered by many to be a prized variant of the summer black truffle.
It is harvested and cleaned for us by Tartufi Bianconi, who will ship it directly to your home.

The Black Uncinato Truffle owes its name to the particular shape of its spores which, when observed under a microscope, show small filaments resembling hooks.
The Uncinato resembles the Scorzone quite closely, but has some characteristics that differ from this type:
-the external part (called peridium) is warty, consisting of less pronounced black warts than those of the Scorzone;
-the flesh (called gleba) is darker than that of the Scorzone, almost chocolate-colored when the truffle is very ripe, and is marked by very branched white veins;
-its shape is variable, it can be round but also flattened;
-its dimensions range from that of a walnut to that of a tennis ball, and are generally smaller than those of the Scorzone.
As it is a product that grows spontaneously, it can vary greatly in shape and size, it may present external scratches or other imperfections that, on the other hand, certify its naturalness.
Storage methods: the Black Uncinato Truffle can be stored in the refrigerator for 7 to 15 days between 2° and 6°, wrapped in absorbent paper.

The Black Truffle Uncinato has delicate, well-defined and intense aromas and flavors, with notes of hazelnut, porcini, and cheese. Perfect for multiple uses in the kitchen, whether cooked or raw.
It can be used to prepare tasty sauces for dressing pasta or risottos, but it is also used to flavor cheeses and cold cuts. Great to put on soft fried eggs or poached eggs. Inside omelets with wild greens. Ideal for dressing grilled beef steak. For fresh tagliolini and short pasta. To be paired with structured white wines and fresh red wines like Valpolicella Classico or Sangiovese from Maremma.
Availability and prices can vary greatly throughout the season, even weekly.
The single pieces of truffles can vary from 15 to 50 grams or more depending on availability.
Orders are shipped directly from the producer from Monday to Thursday.
Fresh truffles will be shipped in a patented polystyrene package specifically designed to maintain their freshness, and will be accompanied by a quality certification from mycologist Saverio Bianconi.
