Truffle. Just reading the name, can't you smell its intense and intoxicating fragrance?
The autumn season is just around the corner, and you’re immediately flooded with that irresistible desire for warm, steaming dishes, mushrooms, chestnuts, and... truffles, of course!
I consider myself the ultimate truffle lover: I literally adore it in all its forms!
Whether it’s an appetizer, a first dish, a second dish, or why not, even a dessert, if you add a pinch of truffle to the dish, it immediately becomes the indisputable star. Amazing.
For this reason, with this article, I chose to present you a menu entirely based on truffles, so you can take inspiration for some preparations and, who knows, come up with some new dish with the ingredients I’ll share with you.

If you also love truffles like crazy (even if you just like them and don't have to be a fanatic like me), I have a super combination in mind for an aperitif or appetizer, to savor alone or with company.
Unmissable in an appetizer for me are Sun-Dried Tomatoes in oil with Truffles, delicious alone or enjoyed with some taralli, obviously always with truffles, or truffle perlage simply placed on crunchy bread crostini.
If you're more of a charcuterie board kind of person, no worries: a nice wooden board of cured meats and cheeses, to which I would pair a Pink Apple and Truffle Jam from the Sibillini Mountains, which pairs perfectly with a aged mountain cheese, such as Monte Veronese!
Now let's move to the first dish, or rather, first dishes, because I have various possibilities to present to you, all of course based on truffles!
The Linguine with black truffle are the first ones I propose to you. Sensational if seasoned with just a knob of butter or a drizzle of extra virgin olive oil.
I also suggest a very valid alternative to these types of pasta: Gluten-free Casarecce with Truffles, a good product without animal-derived ingredients, perfect for the diet of celiacs and vegans, thus able to meet all dietary needs.
If you prefer classic pasta but would like truffles in the seasoning, I can only recommend trying the Pesto with Truffles, an exceptional product that brings the simplicity and aromas of the land to the table.
The sauce is already ready for use, ideal for seasoning first courses, but can also be tried on bruschetta: stunning for your taste buds!
Another incredible first dish that, in my opinion, manages to fully enhance the truffle is undoubtedly the Carnaroli rice with truffle. A great risotto with truffles, creamy consistency, and unmistakable fragrance is just what you need on a cool autumn day.
Let’s start right away with a delicious dish that takes very little time to prepare: a charcuterie board with truffles exclusively on theme!
For the cured meat, I thought of the Truffle Salami and I will try to describe it: high quality, strong flavor, intense aroma, sweet and spicy, enveloping. A organoleptic triumph!
Next to the salami, I would place another product I can’t do without. I’m talking about the Truffle Cheese aged 2-3 months, made from a truffle caciotta aged for only 60 days. Just think that during processing, the caciotta is enriched with truffles, and subsequently, a maturing period of about 2-3 months is planned.
Another truffle cheese that I like to recommend because of its unique flavor is thePerlagrigia under ash with truffles.
Here black truffles are added in pieces to the dough. What distinguishes it and makes it so special is the process following a month of maturation: the shape is placed under beech ash and massaged with various spices. The result is a perfect balance between truffles, spices, and milk. I consider it a true experience.
If it's already late autumn, if not winter, we can prepare it to accompany some meat or truffle puree.
But is there a sweet truffle? But of course, however, it has nothing to do with the "truffles" you find in restaurants, as those take their name only from the shape they have, quite similar indeed to that of a truffle.
I suggest aAcacia Honey and truffle, a delight for the palate. Sweet and with a tantalizing flavor! It's great with fruit, but also just spread on a slice of toasted bread for breakfast!
In fact, even paired with cheeses, it's fantastic! In short, a product that goes well with everything, sometimes it just takes a bit of imagination.
Another sweet gem is surely theSpecialty based on Raspberries with Truffles, which combines the sweet and sour taste of raspberry with the fresh summer truffle.
The interesting combination of these two ingredients makes it perfect for decorating and enriching desserts. It also pairs very well with cheeses.
And to finish, last but not least, I wanted to reserve a place for the king of black gold, that product which is so versatile that it can be used in a thousand ways and different dishes: the Extra virgin olive oil with truffles!
With this multi-use ingredient, you can season pasta, rice, but also roasted white meats. Also try sprinkling a drizzle of this oil on a sliced red meat... you'll see the goodness! Moreover, if you put it on roasted potatoes, it will give a special flavor even to a simple dish.
I feel like I've given you some advice, or rather, maybe I've gotten a bit carried away... But you know how it is when an ingredient is so... I don’t even know how to describe it!
