The Kinara is a truly special cheese: it is the first hard grating cheese, aged for a long time and made with vegetable rennet.
For its production, Piedmontese milk and Cynara Cardunculus flowers, a wild thistle that grows spontaneously throughout the Mediterranean basin, are used.
The long aging, over 12 months, has allowed the product to be lactose-free, to the point of obtaining Halal certification, essential for the Muslim world and for exporting to Arab and Asian markets. It is characterized by delicate and never intrusive aromas with a grainy paste of excellent consistency.
It releases fresh and floral scents, reminiscent of milk and cream, finishing with an herbal note that leaves sensations of freshness and great pleasantness.

The Kinara with vegetable rennet lactose-free (which we present on this page in a 200g portion) is a perfect grating cheese for first courses.
Also excellent on top of cured meat or to be savored alone with a Cremonese mustard.
It pairs wonderfully with a good sparkling wine, a full-bodied red, and with craft beers that are red or dark.
But is it Kinara or Gran Kinara? The current Kinara is the old Gran Kinara, the name has just been changed by the producer as it was considered too similar to another famous cheese.
