The Paccasassi, also known as spaccasassi, are a wild herb that grows on cliffs overlooking the sea. They are usually found in the area of the Riviera del Conero and are an ancient gastronomic tradition as well as a pride of Ancona. This sea fennel is also listed among the protected plant species in the Regional Park of Conero, as well as in other Italian and European areas. 

The paccasassi have a very unique flavor; in fact, they can be used as a main ingredient in many recipes or as a condiment for other dishes like fresh bread, mortadella, and anchovies.
