Aged ham fiocco 8 months, half piece

The Fiocco is the smallest and muscular section of the rear part of the pig's thigh, obtained from the same portion of the most famous Culatello. The processing is very simple and is almost identical to that of the Culatello.

The Fiocco is recognized as a Traditional Italian Agri-food Product typical of Emilia Romagna, and its production area is precisely in western Emilia, particularly in the Bassa Parmense and in some areas of the province of Piacenza.

The Fiocco is an underrated cured meat, yet it is so good! It is generally thought that the Fiocco is the “scrap” of the ham or the younger sibling of the Culatello. However, do not be deceived by the triviality of some rumors found online, which are often the result of deep misinformation about Italian food.

The Fiocco in general, but especially in the Del Sante household, has an important value and comes from DOP hams made from heavy national pigs; a product that is treated with respect and a special care in the processing.
 

Difference between fiocco and culatello

The main differences between Fiocco and Culatello can indeed be found in the context of aging: the Fiocco, being a leaner cured meat, requires a shorter aging period of a minimum of 7 or 8 months (the Culatello requires at least 10). It is precisely its shorter aging that gives it the characteristic sweet and elegantly savory flavor.

Aged ham fiocco 8 months, half piece: use in the kitchen

The Fiocco dolce aged 8 months is an ideal product to enrich precious boards for aperitifs, perhaps pairing it with fresh wines or sparkling wines like a good DOCG Prosecco or Classic Methods with 20 months of surface aging.

It is also excellent for children due to its pleasantness and delicate flavor; an interesting pairing is also with acacia honey or wildflower honey, which have a delicate flavor that allows the unique aromas of this truly special cured meat to be savored. This is the half wheel packaged vacuum sealed with a weight of approximately 1.3 kg.
 

Fiocco dolce: characteristics

The color is rose red and recalls the colors of traditional cured meats. This is also thanks to the fact that Del Sante's Fiocco dolce does not contain any type of preservative, additive, nitrate, or nitrite. To store it best, it is recommended to wrap it in a damp linen cloth and place it in the refrigerator in its lowest part.
