One of the excellences is indeed the Trombetta zucchini from Albenga. The particularly salty soils of the Ponente coast allow for the growth of a zucchini that has a particularly firm texture and a unique sweetness.
If left to grow on the ground, it takes on a spiral shape, while if it is left hanging on strings, it grows longer, forming a true trumpet. Very narrow, it always ends with a more spherical part. Its so charming shape allows for a very significant edible surface. This plant was imported from the Americas and arrived with the first sailing ships that crossed the Ocean. It belongs to the Cucurbitaceae family. Its characteristic is that it is particularly easy to digest and has a low caloric value.
The fruits are appreciated for their low caloric value (the water content is over 90%), high digestibility, and content of potassium and phosphorus.

The trombetta pumpkin from Albenga is very well suited to be cooked in chunks and used to dress pasta, particularly short pasta such as penne, rigatoni, fusilli, etc. The Trombetta di Albenga is very good when steamed as it retains all of its main organoleptic characteristics, as well as its important composition and contribution of mineral salts and noble nutrients.
We recommend it steamed in chunks with monkfish or other types of steamed or baked fish. It is also very good with steamed shrimp and grilled prawns. If you wish, it is also well suited for preservation in oil in slices or cubes, seasoned with red Tropea onions.
