The hare ragù from the Il Poggio farm is a typical condiment of Tuscan tradition that recalls the true Etruscan flavors.
This tasty sauce is prepared with a base of finely chopped fresh vegetables (onion, celery, carrot, etc...). Once the vegetables are sautéed, the meat is added to begin the first cooking phase.
The meats are very fine and during the cooking process, wine, sun-dried tomatoes from the Il Poggio farm, and other ingredients are added. The cooking time is very long but is necessary to ensure the best guarantee for a strong and balanced flavor.
Ingredients: peeled tomatoes, hare meat, adult beef, extra virgin olive oil, red wine, carrots, onions, celery, salt, pepper, bay leaves, chili, rosemary, and sage.
The hare ragù with pappardelle has been awarded as the dish that best represents the Tuscan tradition. It can also be an excellent condiment for tagliatelle, or to fill tortelloni or ravioli in broth.
A rough pasta is recommended to better absorb all the flavors of the sauce, in order to achieve a delicious plate of pasta with hare ragù from the Il Poggio farm.
