The roast porchetta by Corrado Benedetti is made only from piglets no older than three to four months. The particularly slow cooking is a feature that makes it light and easily digestible.
The preparation of this product involves salting the piglet and flavoring it with garlic, rosemary, juniper, pepper, cinnamon, and cloves; afterwards, the whole piglet is cooked in steamed oven.
