Its origin dates back to the historical region of Lucania during the Roman era. The historian Marco Terenzio Varrone testified to its Lucanian origin in "De lingua latina," writing: “They call lucanica a minced meat encased in a gut because our soldiers learned how to prepare it from the Lucanians.” This dish thus has ancient origins and was particularly appreciated not only for its flavor but also for its ease of transport and preservation with salt. The term sausage actually means “salted meat”; in the absence of refrigerators or preservatives, salt and slow curing were used, and it is still prepared today as per tradition.
Maintaining the peasant tradition, the preparation of luganega still follows the ancient recipe of Apicius, contained in the De Re Coquinaria from the 1st century AD: “To make the lucaniche: grind pepper, cumin, pepperwort, rue, parsley, sweet spices, laurel berries, Apicius sauce; and mix it all with minced meat, then pound the mixture again together with sauce, whole pepper, plenty of fat, and fennel. Then stuff it all into a casing, making it as long as possible. And thus it is suspended in smoke.”
The luganega cured sausage is consumed cooked and can be used for numerous recipes: you can simply grill it or cook it in a pan, to be served with tasty potatoes, roasted vegetables, or other types of side dishes. The luganega is also suitable as a condiment for pasta and risotto, and can even be used in omelettes or as a filling for savory pastries.
