The cheese Ubriaco di Raboso from La Casearia Carpenedo is the first creation of Antonio Carpenedo among his Aged Cheeses, dated as far back as 1976, which gave rise to the Ubriaco brand. A 40-year-old success during which experimentation and a commitment to high quality have never ceased.

The Ubriaco di Raboso is a cow's milk cheese with a rind that takes on the classic wine-red color, a testament to the meticulous marinating process that transforms the paste into a deep yellow with rare and small holes.

This extraordinary cheese is a poem of aromas beautifully combined: milk and wine together offer a sensory experience that brings you back to the simple, the true, the healthy. An experience that has convinced several juries. It has indeed received the Golden Spike in 1996, 2nd place at Caseus Veneti 2013, 3rd place at Alma Caseus 2014, and bronze at the World Cheese Awards 2015-16.

The cheese Ubriaco di Raboso from La Casearia Carpenedo (which we present on this page in a quarter form of about 1.5kg) has a delicate humidity, a result of the evolution of the paste during aging, and a semi-hard and compact consistency. It tends to crumble, which is why it is suitable to be served in flakes as it matures.

It pairs perfectly with polenta, a crunchy piece of bread, and a medium-structured red wine. Excellent with Radicchio Rosso from Treviso, a combination of a unique territory.

TASTING

The cheese Ubriaco di Raboso from La Casearia Carpenedo gives fruity notes of wild blackberry and marasca. The winey notes are delicate and persistent, enveloped by the delicate but pronounced slightly spicy flavor.
