Bologna IGP mortadella “Ovalina” 650g

The name mortadella comes from the Latin term mortarium, which meant the mortar used to grind pork meat with a pestle.

In the archaeological museum of Bologna, there is a Roman stele highlighting a shepherd accompanying pigs while holding a mortar and pestle.
This cold cut was also a method of preserving pork meat over time. The production technique was officially recognized by Cardinal Farnese only in 1661, who decreed that only pork should be used. This is probably the first true production regulation of a food in history. 

 
Mortadella Bologna is produced only with noble cuts of pork, with meat and fat cubes finely chopped. The flavor is full and well-balanced thanks to the presence of pieces of pork fat that provide greater sweetness to the meat.

Bologna IGP mortadella “Ovalina” 650g: use in the kitchen

Excellent cold cut for sliced sandwiches, it’s the ingredient that, when cut into cubes, makes every appetizer irresistible (tell me if it’s not true that it’s the first “lemmo” that should be filled), and finally it’s the typical cold cut of classic tortellini alla bolognese.

As per Bolognese tradition, it also makes an excellent appetizer when reduced “to foam” with warm croutons and butter.
