The Carnaroli Rice Classic from Acqua e Sole is truly extraordinary! It's no coincidence that Carnaroli is referred to as the "King of Rice": thanks to its high starch content, firmer consistency, and longer grains, it is able to hold the cooking superbly.
The Carnaroli Rice is a variety originating from Pavia, Novara, and Vercelli, created in 1945 thanks to the work of the rice grower from Paullo, Angelo De Vecchi, who crossed two other rice varieties: Vialone and Lencino. The name of this particular rice seems to derive from that of one of his collaborators, one Carnaroli.

It is ideal for preparing risottos based on meat as it remains particularly separate in the style of Mantuan tradition. Its lower starch content indeed makes it difficult to achieve creamy and flowing rice.
However, it is also perfect for preparing cold rice based on vegetables as it retains its crunchiness and, above all, does not break.
