The olives are strictly hand-picked and processed within a few hours, following the traditional cold extraction method. The fruits are crushed in modern continuous cycle plants with granite mills whose rotation ensures the homogeneity of the paste, resulting in low-acidity oil with incomparable organoleptic characteristics.
The main characteristic of the Coratina is its polyphenol content equal to three times the amount found in any other oil.
It appears in a deep green color with golden hues and a pronounced aroma of dill, artichoke, fennel, and hay.
